which features heavily in his simple, creative and seasonal dishes. <\/p>\n\n\n\n<p>Each dish will take you for a walk in the mountains, from the lakes to the peaks \u2013 souffle with gentian, langoustines marinated in lemon, venison with blackberry and pine, ice cream with Alpine milk, fish from the lake or Jerusalem artichokes flavoured with clove broth and truffle are among the delights to be savoured. <\/p>\n\n\n\n<p>Simplicity and nature are also reflected in the decor of the dining room, with its wood, natural materials and large windows making the most of the mountain views, and
